Avocado Toast with Feta, Cherry Tomatoes, Cranberries & Walnuts

Ingredients:
2 ripe avocados, halved and pitted
2–4 slices sourdough bread, toasted
1 cup cherry tomatoes, halved
½ cup feta cheese (preferably marinated in olive oil)
¼ cup dried cranberries, chopped
¼ cup walnuts, chopped
1–2 tsp lemon juice
Salt and pepper, to taste
Fresh herbs (optional): parsley or basil
Optional toppings: balsamic glaze, honey, poached egg, extra virgin olive oil
Instructions:
1. Prepare the Avocado:
Scoop the avocado into a bowl and mash it with a fork, or slice it if you prefer a chunkier texture. Add lemon juice, salt, and pepper to taste.
2. Toast the Bread:
Toast your sourdough slices to your desired crispness.
3. Assemble the Toasts:
Spread the mashed or sliced avocado generously onto each slice.
Layer with cherry tomatoes, then sprinkle on crumbled feta, chopped cranberries, and walnuts.
