Pineapple Juice Cake
Ingredients:
1½ cups all-purpose flour
1 tsp baking powder
½ tsp salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
½ cup pineapple juice
1 tsp vanilla extract
Optional Glaze:
½ cup powdered sugar
2–3 tbsp pineapple juice
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or a small bundt pan.
2. Mix dry ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
3. Cream butter and sugar: In a large bowl, beat the softened butter and sugar until light and fluffy (about 2–3 minutes).
4. Add eggs: Beat in eggs one at a time, mixing well after each addition.
5. Add pineapple juice and vanilla: Mix in pineapple juice and vanilla extract until combined.
6. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, mixing just until combined.
7. Bake: Pour batter into the prepared pan and bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
9. Optional glaze: Mix powdered sugar and pineapple juice until smooth and drizzle over the cooled cake.
