Baked Cauliflower Cheese
Ingredients
- 1 medium cauliflower, broken into florets
- 1 teaspoon salt
- 2 tablespoons olive oil
- (You can also add cheese sauce ingredients below — optional but traditional!)
- 2 tablespoons butter
- 2 tablespoons plain flour
- 1 ½ cups milk
- 1 ½ cups grated cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Prepare the cauliflower:
- Bring a large pot of water to a boil.
- Add 1 teaspoon of salt and the cauliflower florets.
- Boil for about 5 minutes, until just tender.
- Drain well and set aside.
- Roast (optional step for more flavor):
- Toss the cauliflower florets with 2 tablespoons of olive oil.
- Spread on a baking tray and roast for 10–15 minutes until slightly golden.
- Make the cheese sauce (if using):
- In a saucepan, melt the butter over medium heat.
- Stir in the flour and cook for 1 minute.
- Gradually whisk in the milk until smooth and thickened.
- Stir in the grated cheese until melted.
- Season with salt and pepper.
- Assemble:
- Place the cooked cauliflower in an ovenproof dish.
- Pour the cheese sauce evenly over the top.
- Sprinkle with extra cheese if you like.
- Bake:
- Bake in the oven for 20–25 minutes, until the top is golden and bubbling.
- Serve hot as a side dish or a light vegetarian meal.
