Baked Cauliflower Cheese

Ingredients

  • 1 medium cauliflower, broken into florets
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • (You can also add cheese sauce ingredients below — optional but traditional!)
    • 2 tablespoons butter
    • 2 tablespoons plain flour
    • 1 ½ cups milk
    • 1 ½ cups grated cheddar cheese
    • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Prepare the cauliflower:
    • Bring a large pot of water to a boil.
    • Add 1 teaspoon of salt and the cauliflower florets.
    • Boil for about 5 minutes, until just tender.
    • Drain well and set aside.
  3. Roast (optional step for more flavor):
    • Toss the cauliflower florets with 2 tablespoons of olive oil.
    • Spread on a baking tray and roast for 10–15 minutes until slightly golden.
  4. Make the cheese sauce (if using):
    • In a saucepan, melt the butter over medium heat.
    • Stir in the flour and cook for 1 minute.
    • Gradually whisk in the milk until smooth and thickened.
    • Stir in the grated cheese until melted.
    • Season with salt and pepper.
  5. Assemble:
    • Place the cooked cauliflower in an ovenproof dish.
    • Pour the cheese sauce evenly over the top.
    • Sprinkle with extra cheese if you like.
  6. Bake:
    • Bake in the oven for 20–25 minutes, until the top is golden and bubbling.
  7. Serve hot as a side dish or a light vegetarian meal.
