📝 Ingredients

  • 1 ball fresh burrata
  • 2 cups cherry tomatoes
  • 2–3 tbsp olive oil
  • 2–3 cloves garlic, sliced or minced
  • Salt & black pepper, to taste
  • ½ tsp dried oregano (optional)
  • Fresh basil leaves, torn
  • Balsamic glaze, for drizzling (optional but amazing)
  • Crusty bread, for serving

👩‍🍳 Instructions

1. Roast the Cherry Tomatoes

  1. Preheat oven to 400°F (200°C).
  2. On a baking tray, toss the cherry tomatoes with:
    • olive oil
    • garlic
    • salt
    • pepper
    • oregano (optional)
  3. Spread in a single layer.
  4. Roast for 15–20 minutes, or until tomatoes burst and get lightly caramelized.

2. Prep the Burrata

  • Place the burrata in the center of a serving plate.
  • Let it sit at room temperature while the tomatoes roast (makes it extra creamy).

3. Assemble the Dish

  1. Spoon the hot, roasted tomatoes around and on top of the burrata.
  2. Add any leftover garlic-oil from the tray.
  3. Scatter fresh basil over the top.
  4. Drizzle with olive oil and balsamic glaze (optional).

4. Serve

Serve immediately with:

  • focaccia
