Ingredients (makes ~10β12 bites)

Β½ cup cottage cheese (120 g)
1 large egg
1 small apple, peeled & finely chopped (about 90 g)
ΒΌ cup oat flour (30 g) (or almond flour for low-carb)
Β½ tsp baking powder (2 g)
Β½ tsp ground cinnamon (2 g)
1β2 tsp maple syrup or honey (5β10 ml) (optional)
Pinch of salt
Instructions
Step 1 β Make the Batter
In a bowl, whisk the egg, cottage cheese, maple/honey (if using), and salt.
Add the oat flour, baking powder, and cinnamon.
Mix until a smooth batter forms.
Fold in the chopped apple.
Step 2 β Portion the Bites
Lightly grease a mini muffin tray (or silicone cups).
Divide the batter between the cups, filling each about ΒΎ full.
Step 3 β Cook (Choose Your Method)
Air Fryer:
Cook at 320Β°F (160Β°C) for 8β10 minutes, until golden and set.
Oven:
