Fluffy Cottage Cheese Pancake Bites π₯ β Protein-Packed, Soft & Guilt-Free
These mini pancake bites are light, fluffy, and loaded with protein thanks to cottage cheese. Perfect for breakfast meal prep, snacking, or kidsβ lunchboxes. Enjoy them plain or dress them up with berries, nut butter, or a drizzle of honey!
Ingredients (Makes 18β20 Bites)
1 cup (240 g) cottage cheese
2 large eggs
ΒΌ cup (28 g) almond flour (or oat flour for a softer texture)
1 tsp (5 ml) vanilla extract
1β2 tbsp (15β30 ml) honey or maple syrup (optional)
Β½ tsp (2.5 g) baking powder
Pinch of salt
Optional toppings: fresh berries, nut butter, honey
Step 1 β Preheat the Oven
Heat your oven to 350Β°F (175Β°C). Lightly grease a mini muffin pan or line it with mini liners.
Step 2 β Blend the Batter
Add cottage cheese, eggs, flour, vanilla, sweetener (if using), baking powder, and salt to a blender.
Blend until smooth and creamy.
Step 3 β Fill the Pan
Pour the batter into the mini muffin tray, filling each cup about ΒΎ full.
Step 4 β Bake
Bake for 12β15 minutes, or until the tops are set and lightly golden.
Step 5 β Cool & Serve
Let them cool for 5 minutes, then pop them out and enjoy warm or cold.
