1 can diced tomatoes with green chiles (no sugar added)
3 cups beef broth
4 oz cream cheese, cubed
1 cup shredded cheddar cheese
½ cup heavy cream
Salt & pepper to taste
Instructions
In a large pot, brown the ground beef over medium heat. Drain excess grease if needed.
Add onion and garlic, cooking until fragrant and soft.
Stir in taco seasoning and diced tomatoes with green chiles.
Pour in beef broth and bring to a gentle simmer.
Add cream cheese and stir until completely melted.
Lower heat, then stir in heavy cream and shredded cheddar.
Simmer 10–15 minutes until thick, creamy, and irresistible.
Taste and adjust seasoning.
