Lemon Garlic Chicken Bites

Ingredients
- 1 ½ lbs (about 680 g) boneless, skinless chicken breasts or thighs, cut into bite-sized cubes
- 2 tbsp olive oil (divided)
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika (optional, for color)
- ½ tsp dried oregano or Italian seasoning
- 1 tbsp butter (optional, for richness)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Marinate the chicken (optional but flavorful)
- In a bowl, toss chicken cubes with 1 tbsp olive oil, lemon juice, lemon zest, garlic, salt, pepper, paprika, and oregano.
- Let marinate for 10–15 minuteswhile you prep your pan (or up to 2 hours in the fridge).
2. Sear the chicken
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add chicken pieces in a single layer (don’t overcrowd — cook in batches if needed).
- Sear for 3–4 minutes per side, until golden brown and cooked through (internal temperature 165°F / 74°C).
3. Add the finishing touch
- In the last minute of cooking, add butter to the skillet and toss to coat the chicken.
- Let the butter melt and mix with the garlic and lemon bits to create a quick, flavorful pan sauce.
4. Serve
- Sprinkle with fresh parsley and an extra squeeze of lemon juice for brightness.

- Serve over rice, orzo, or mashed potatoes.
- Pair with roasted vegetables or a fresh Greek salad.
- Toss into pasta or wrap in lettuce cups for a light lunch.
Tips & Variations
- Add a pinch of red pepper flakesfor a little heat.
- For extra richness, deglaze the pan with a splash of white wine or chicken broth after searing, and let it reduce.
- Make it creamy: Stir in 2 tbsp heavy cream at the end and simmer for 1–2 minutes.
