Ingredients
For the biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup cold butter, cut into pieces
1 cup cold buttermilk
For the sausage gravy:
1 lb breakfast sausage
1/4 cup all-purpose flour
3 cups whole milk
1/2 teaspoon salt
1 teaspoon black pepper (or more to taste)
Instructions
Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
In a bowl, mix flour, baking powder, baking soda, and salt.
Cut in cold butter until the mixture resembles coarse crumbs.
Stir in buttermilk just until combined.
Drop biscuit dough onto the baking sheet and bake 12–15 minutes until golden.
While biscuits bake, cook sausage in a skillet over medium heat, breaking it up until fully browned.
Sprinkle flour over the sausage and stir well. Cook 1–2 minutes.
Slowly pour in milk, stirring constantly to prevent lumps.
Season with salt and black pepper.
Simmer until thick and creamy.
Split warm biscuits and spoon sausage gravy generously over the top.
