Ingredients:
For the Chicken & Potatoes:
* 1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
* 1 lb baby potatoes, halved or quartered if large
* 2 tablespoons olive oil
* 1 teaspoon smoked paprika
* 1 teaspoon garlic powder
* ½ teaspoon onion powder
* ¼ teaspoon cayenne pepper (or a pinch more for extra spice!)
* Salt and freshly ground black pepper to taste
* Optional: A squeeze of lime juice over the cooked chicken
For the Fresh Guacamole:
* 2 ripe avocados, mashed
* ¼ cup finely chopped red onion
* 1 tablespoon fresh cilantro, chopped
* 1 tablespoon fresh lime juice
* Salt and freshly ground black pepper to taste
* Optional: A small pinch of chili flakes for a little extra zing
Instructions:
Preheat & Prep: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Season the Potatoes: In a medium bowl, toss the halved or quartered potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on one side of the prepared baking sheet.
- Season the Chicken: In the same bowl (no need to wash it!), toss the chicken pieces with the remaining 1 tablespoon of olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Make sure the chicken is well-coated.
- Roast Away! Place the baking sheet in the preheated oven. Roast the potatoes for 15 minutes. Then, carefully add the seasoned chicken pieces to the other side of the baking sheet, keeping them in a single layer.
- Finish Roasting: Continue roasting for another 15-20 minutes, or until the potatoes are tender and golden brown, and the chicken is cooked through and nicely browned.
- Whip Up the Guacamole: While the chicken and potatoes are roasting, prepare your guacamole. In a small bowl, gently mash the avocados. Stir in the chopped red onion, cilantro, and lime juice.
