📝 Ingredients:
• 1½ lb ground beef 🥩
• 16 oz bowtie (farfalle) pasta 🍝
• 24 oz Velveeta cheese, cubed 🧀
• 8 oz cream cheese, softened
• ½ can cream of chicken soup (about 5 oz) 🥫
• 1 can Rotel tomatoes with green chilies, undrained 🌶️🍅
• 1 red bell pepper, finely diced 🫑
• Salt and black pepper, to taste 🧂
• ½–1 cup reserved pasta water (as needed)

👩‍🍳 Directions:

1️⃣ Cook the pasta:
Boil bowtie pasta in salted water until tender. Before draining, reserve ½–1 cup of the cooking water. Drain and set aside.

2️⃣ Brown the beef:
In a large skillet or pot over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess grease.

3️⃣ Add vegetables:
Stir in the diced red bell pepper and cook for a few minutes until slightly softened but still vibrant.

4️⃣ Make the sauce:
Reduce heat to medium-low. Add Velveeta, cream cheese, cream of chicken soup, and Rotel (with juices). Stir gently until everything melts into a creamy, smooth sauce.

5️⃣ Combine:
Add the cooked pasta and toss until well coated. If the sauce is too thick, stir in a little reserved pasta water until silky and glossy.
