For the Chicken:
1 lb chicken breasts, cut into bite-sized pieces
1 tbsp soy sauce
1 tsp cornstarch
For the Sauce:
3 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp hoisin sauce
1-2 tsp sugar (adjust based on your taste)
1 tsp rice vinegar
Β½ cup chicken broth
For the Stir-Fry:
2 tbsp vegetable oil
1 medium onion, roughly chopped
3 garlic cloves, minced
1-inch piece of ginger, peeled and minced
1 red bell pepper, cut into bite-sized strips
Β½ cup unsalted roasted cashews
1-2 green onions, chopped (for garnish)
1 tsp cornstarch mixed with 1 tbsp water (cornstarch slurry)
Instructions:
