Sunshine Power Breakfast Plate with Avocado, Veggies & Crispy Chickpeas π₯π
A vibrant, nutrient-packed breakfast plate featuring perfectly fried eggs, buttery avocado, juicy tomatoes, garlicky sautΓ©ed spinach, golden mushrooms, and lightly seasoned crispy chickpeas. Fresh, filling, and absolutely delicious!

Fried Eggs
2 large eggs
1 tbsp butter or olive oil
Salt & pepper
Veggies
1 cup baby spinach
4β5 cherry tomatoes, halved
Β½ cup mushrooms, sliced
Β½ avocado
Salt & pepper
Crispy Chickpeas
Β½ cup chickpeas (canned, drained & rinsed)
1 tsp olive oil
ΒΌ tsp paprika
ΒΌ tsp garlic powder
Salt

- Make the Crispy Chickpeas
Pat chickpeas dry.
Toss with oil, paprika, garlic powder, and salt.
Air fry at 400Β°F (200Β°C) for 10β12 mins
or roast in the oven for 20 mins, shaking halfway.
- SautΓ© the Mushrooms
Add mushrooms to a pan with a drizzle of oil.
Cook 4β5 minutes until golden.
Season with salt and pepper.
- Wilt the Spinach
In the same pan, add spinach.
Cook 1β2 minutes until just wilted.
Season lightly.
- Fry the Eggs
Heat butter/oil over medium-low.
Crack in eggs and cook until whites are set and yolks are bright.
Season with salt & pepper.
- Build the Plate
Add fried eggs, sliced avocado, tomatoes, spinach, mushrooms, and crispy chickpeas.
Finish with extra pepper if desired.
