🍗 Buffalo Chicken Lollipops

  • Ingredients (Serves 4)
  • 12 chicken drumettes (or whole wings, trimmed into lollipops)
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Oil for frying

For the Buffalo Sauce:

  • 1/2 cup hot sauce (like Frank’s RedHot)
  • 1/4 cup unsalted butter
  • 1 tablespoon honey (optional)
  • 1/2 teaspoon garlic powder

For Serving:

  • Ranch or blue cheese dressing
  • Carrot and celery sticks
  • Fresh chives (for garnish)

Instructions

1. Prepare the Chicken

If using whole wings, trim and push the meat down toward one end of the bone to create a “lollipop” shape.
Pat dry with paper towels.

2. Season & Coat

In a bowl, mix flour, salt, pepper, garlic powder, and paprika.
Coat each chicken piece evenly in the flour mixture.
Shake off excess.

3. Fry

Heat oil in a deep pan to 350°F (175°C).
Fry chicken in batches for 8–10 minutes until golden brown and fully cooked.
Remove and drain on paper towels.

(Internal temperature should reach 165°F / 75°C.)

4. Make the Buffalo Sauce

In a small saucepan, melt butter over low heat.
Add hot sauce, honey, and garlic powder.
Stir until smooth and slightly thickened.

5. Coat the Chicken

Place fried chicken lollipops in a large bowl.
Pour warm buffalo sauce over them and toss gently until fully coated.


To Serve

Arrange on a plate.
Sprinkle with fresh chives.
Serve with ranch or blue cheese dressing and carrot sticks.
