For the spiced chickpeas:
2 cups cooked chickpeas (or 1 can, drained)
2 tbsp olive oil
2 cloves garlic (minced)
1/2 onion (chopped)
1 tsp paprika
1/2 tsp cumin
1/2 tsp chili flakes (optional)
1/2 cup crushed tomatoes
Salt & black pepper
For the fresh salad:
1 cucumber (diced)
1 tbsp fresh parsley (chopped)
1 tbsp fresh mint (optional)
1 tbsp lemon juice
1 tbsp olive oil
Salt
For serving:
Plain yogurt or Greek yogurt
Warm pita bread

1๏ธโฃ Cook the chickpeas:
Heat olive oil in a pan.
Add onion and garlic, sautรฉ until soft.
Add paprika, cumin, chili flakes, salt & pepper.
Stir for 30 seconds.
Add crushed tomatoes and chickpeas.
Simmer for 8โ10 minutes until slightly thick.
2๏ธโฃ Prepare the salad:
Mix diced cucumber with parsley, mint, lemon juice, olive oil, and salt.
3๏ธโฃ Assemble the bowl:
Place warm spiced chickpeas in a bowl.
Add fresh cucumber salad on the side.
Top with a spoon of yogurt.
Serve with warm pita bread.
