1 lb lean ground beef
1 medium sweet potato, peeled and diced
1 zucchini, sliced
1/2 small onion, diced
2 tbsp olive oil
1 tsp paprika
1 tsp cumin
1/2 tsp chili powder
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

1๏ธโฃ. Cook the Sweet Potatoes:
In a large skillet, heat olive oil over medium heat. Add diced sweet potatoes and sautรฉ for 8โ10 minutes, stirring occasionally, until tender and golden.
2๏ธโฃ. Brown the Ground Beef:
Push sweet potatoes to one side of the skillet. Add ground beef and cook, breaking it apart, until fully browned and no longer pink, about 5โ7 minutes.
3๏ธโฃ. Sautรฉ Zucchini & Onion:
Stir in the diced onion and sliced zucchini. Cook for another 5โ6 minutes, or until the vegetables are softened and starting to caramelize.
4๏ธโฃ. Season Everything:
Add paprika, cumin, chili powder, salt, and pepper. Stir well to coat all the ingredients in the seasoning and allow flavors to meld for 2โ3 minutes.
5๏ธโฃ. Garnish & Serve:
Turn off the heat. Toss everything together gently and garnish with freshly chopped parsley. Serve hot for a vibrant, hearty one-pan meal.
