Ingredients
🍗 2 grilled chicken breasts
🥬 3 cups spinach
🥑 2 avocados
🍅 1 cup cherry tomatoes
🥒 1 large cucumber
🌽 1 cup sweet corn
🍋 2 tbsp lemon juice
🫒 3 tbsp olive oil
🌶 Chili flakes
🧂 Salt & pepper
Directions
Season and grill chicken until golden and cooked through (74°C internal temperature). Rest and slice.
Mash one avocado with lemon juice; slice the second.
Fill a bowl with spinach and arrange tomatoes, cucumber, corn, and avocado.
Add sliced chicken on top.
Drizzle olive oil and sprinkle chili flakes before serving.
