Ingredients:
2 cups basmati rice
1 tbsp turmeric
1 tbsp olive oil
500g minced beef
1 medium onion (chopped)
2 garlic cloves (minced)
2 medium carrots (cubed)
100g green beans (cut into 1-inch pieces)
2 tbsp tomato paste
1½ cups beef stock
1 tsp salt (adjust to taste)
½ tsp black pepper
Method:
- Cook the Rice:
Rinse 2 cups basmati rice. Boil with 4 cups water, 1 tbsp turmeric, and a pinch of salt until fluffy. Drain and set aside. - Cook the Beef:
Heat 1 tbsp olive oil in a pan over medium heat. Add chopped onion and cook until soft. Stir in minced garlic and cook for 30 seconds. - Brown the Mince:
Add 500g minced beef and cook until fully browned, breaking it apart as it cooks. - Add Vegetables:
Stir in cubed carrots and green beans. Cook for 3–4 minutes. - Make the Sauce:
Add 2 tbsp tomato paste, salt, and black pepper. Pour in 1½ cups beef stock. Simmer for 12–15 minutes until vegetables are tender and the sauce thickens. - Serve:
Spoon the rich minced beef mixture over the warm turmeric rice and serve immediately
