👨👩👧 Servings:
6–8 flatbreads
🧾 Ingredients
For the dough:
- 2 cups (250 g) all-purpose flour (or bread flour)
- 1 tsp salt
- 1 tsp baking powder (optional – for extra fluffiness)
- 2 tbsp olive oil (or melted butter)
- ¾ cup (180 ml) warm water or milk (add a bit more if dough feels dry)
For the topping / flavoring:
- 2 tbsp olive oil (for brushing)
- 1 clove garlic, finely minced (optional for more aroma)
- 1–2 tbsp chopped fresh parsley
- ½ tsp chili flakes (adjust to taste)
- Pinch of sea salt or flaky salt for finishing
👩🍳 Instructions
- Mix the dough
- In a large bowl, combine flour, salt, and baking powder.
- Add olive oil and warm water gradually.
- Mix until a rough dough forms, then knead for about 3–4 minutes until smooth and soft.
- Cover and let rest for 15–20 minutes (optional, but helps gluten relax and makes rolling easier).
- Divide and shape
- Divide the dough into 6–8 equal balls.
- On a lightly floured surface, roll each piece into a thin round (about 6–7 in / 15 cm diameter).
- Prepare the herb oil
- In a small bowl, mix olive oil, minced garlic (if using), parsley, and chili flakes.
- Set aside for brushing.
- Cook the flatbreads
- Heat a dry skillet or cast-iron pan over medium-high heat.
- Place a rolled dough round on the hot pan and cook for 30–45 seconds until bubbles appear.
- Flip and cook another 30–45 seconds on the other side.
- Repeat until lightly golden and cooked through.
- Stack cooked flatbreads on a plate covered with a towel to keep them soft.
- Brush with flavor
- While still warm, brush each flatbread with the parsley–chili–oil mixture.
- Sprinkle a pinch of sea salt on top for extra flavor.
🌶️ Optional Add-Ons
- Add a squeeze of lemon juice to the herb oil for brightness.
- Swap parsley for cilantro, dill, or basil.
- For cheesy flatbreads: brush with butter and sprinkle with grated Parmesan before serving.
- Add nigella seeds or sesame seedsto the dough for texture.
🍽️ Serving Ideas
- Serve warm with hummus, tzatziki, baba ghanoush, or garlic butter.
- Use as a base for wraps (grilled chicken, falafel, or roasted veggies).
- Great alongside curries, stews, or soups.
🧊 Storage
- Store leftover flatbreads in an airtight bag for up to 2 days at room temperature.
- Reheat in a dry pan or in the oven for a few seconds.
- They also freeze well — separate each with parchment paper and reheat directly from frozen.
