Ingredients (makes 2 servings)
- 2 medium beetroots, peeled and chopped
- 1 medium lemon, juiced (or 2 tablespoons bottled lemon juice)
- 1 small apple (optional, for natural sweetness)
- 1-inch piece fresh ginger, peeled (optional for digestion boost)
- 1 cup cold water or coconut water
- Ice cubes (optional)
- Mint leaves (optional, for garnish)
Instructions
- Prepare ingredients
- Wash and peel the beetroot and ginger.
- Chop everything into small pieces for easy blending.
- Blend
- Add beetroot, lemon juice, apple (if using), ginger, and water to a blender.
- Blend until smooth.
- Strain (optional)
- For a smoother drink, strain through a fine mesh sieve or cheesecloth.
- If you like a fiber-rich juice, skip this step.
- Serve
- Pour into a glass, add ice if desired, and garnish with mint leaves.
- Drink immediately for maximum nutrient benefit.
