For the chicken drumsticks:
6 chicken drumsticks
2 tbsp butter, melted
2 garlic cloves, minced
1 tbsp fresh parsley (or 1 tsp dried)
Β½ tsp paprika
Salt & pepper, to taste
For the mashed potatoes:
4 medium potatoes, peeled and cubed
3 tbsp butter
ΒΌ cup milk or cream
Salt & pepper, to taste
Optional: drizzle of gravy or extra melted butter
For the glazed carrots:
2 cups baby carrots
1 tbsp butter
1 tsp brown sugar or honey
Β½ tsp dried parsley
Pinch of salt

Preheat oven to 400Β°F (200Β°C).
Mix butter, garlic, parsley, paprika, salt, and pepper in a bowl. Rub all over drumsticks and place them on a baking sheet.
Roast chicken for 35β40 minutes until golden and internal temp reaches 165Β°F (74Β°C).
Boil potatoes in salted water for 15β20 minutes until soft. Drain, mash, and mix with butter and milk. Season to taste.
Simmer carrots in a small pan with butter, sugar/honey, parsley, and a pinch of salt for 10β12 minutes until tender and glossy.
Assemble your plate with chicken, mashed potatoes (drizzle optional gravy or butter), and glazed carrots.
