🍝🔥 Creamy Provolone Chicken Spaghetti
with Cajun Four-Cheese Sauce
Ingredients
For the Chicken
1.25 lbs chicken breast, sliced into strips
1 tbsp olive oil
2 tbsp butter
1½ tsp Cajun seasoning
½ tsp smoked paprika
Salt & black pepper, to taste
For the Spaghetti & Sauce
12 oz spaghetti
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
2 oz cream cheese
1 cup shredded provolone
½ cup grated Parmesan
½ cup shredded mozzarella
½ cup shredded cheddar
½ cup reserved pasta water (only if needed)
½ tsp red pepper flakes (optional)
Extra Cajun seasoning, to taste
Optional Garnish
Fresh parsley
Extra Parmesan
A drizzle of garlic butter
Instructions
- Cook the Spaghetti
Boil pasta in salted water until al dente. Reserve ½ cup of pasta water, drain, and set aside.
- Cajun Garlic Butter Chicken
- Season chicken with Cajun seasoning, smoked paprika, salt, and pepper.
- Heat olive oil and butter in a skillet over medium-high.
- Sauté chicken 3–4 minutes per side until golden and cooked through.
- Remove and set aside.
- Make the Four-Cheese Cajun Sauce
- In the same skillet, melt a little more butter if needed.
- Add garlic and cook 30 seconds until fragrant.
- Pour in chicken broth and heavy cream; stir to combine.
- Add cream cheese and whisk until fully melted and smooth.
- Lower the heat and add provolone, Parmesan, mozzarella, and cheddar.
- Stir until the sauce becomes velvety and thick.
- Season with Cajun seasoning and red pepper flakes.
- Add splashes of pasta water if the sauce needs thinning.
- Combine Everything
Add spaghetti to the sauce and toss well.
Return chicken to the pan and coat with the creamy cheese sauce.
- Serve
Top with parsley, grated Parmesan, and a drizzle of garlic butter if you want it extra rich.
