with Cajun Four-Cheese Sauce


Ingredients

For the Chicken

1.25 lbs chicken breast, sliced into strips

1 tbsp olive oil

2 tbsp butter

1½ tsp Cajun seasoning

½ tsp smoked paprika

Salt & black pepper, to taste

For the Spaghetti & Sauce

12 oz spaghetti

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

2 oz cream cheese

1 cup shredded provolone

½ cup grated Parmesan

½ cup shredded mozzarella

½ cup shredded cheddar

½ cup reserved pasta water (only if needed)

½ tsp red pepper flakes (optional)

Extra Cajun seasoning, to taste

Optional Garnish

Fresh parsley

Extra Parmesan

A drizzle of garlic butter


Instructions

  1. Cook the Spaghetti

Boil pasta in salted water until al dente. Reserve ½ cup of pasta water, drain, and set aside.


  1. Cajun Garlic Butter Chicken
  2. Season chicken with Cajun seasoning, smoked paprika, salt, and pepper.
  3. Heat olive oil and butter in a skillet over medium-high.
  4. Sauté chicken 3–4 minutes per side until golden and cooked through.
  5. Remove and set aside.

  1. Make the Four-Cheese Cajun Sauce
  2. In the same skillet, melt a little more butter if needed.
  3. Add garlic and cook 30 seconds until fragrant.
  4. Pour in chicken broth and heavy cream; stir to combine.
  5. Add cream cheese and whisk until fully melted and smooth.
  6. Lower the heat and add provolone, Parmesan, mozzarella, and cheddar.
  7. Stir until the sauce becomes velvety and thick.
  8. Season with Cajun seasoning and red pepper flakes.
  9. Add splashes of pasta water if the sauce needs thinning.

  1. Combine Everything

Add spaghetti to the sauce and toss well.
Return chicken to the pan and coat with the creamy cheese sauce.


  1. Serve

Top with parsley, grated Parmesan, and a drizzle of garlic butter if you want it extra rich.
