🥗 Low-Carb, Diabetic-Friendly Spinach Pie
✅ Ingredients:
1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 pound (450g) fresh spinach (or 1 package frozen, thawed and drained)
3 eggs
1 cup low-fat cottage cheese or part-skim ricotta
1/2 cup crumbled feta cheese (low-fat if available)
Salt and pepper to taste
Optional: Fresh dill or parsley
Optional: 2-3 sheets of whole wheat or low-carb phyllo dough (for the top only, optional)
🔪 Instructions:
Preheat oven to 350°F (175°C).
Sauté onions in olive oil until translucent. Add garlic and cook for 1 minute.
Add spinach and cook until wilted (or just mix if using thawed frozen spinach). Let cool slightly.
Mix eggs, cheeses, herbs, salt, and pepper in a large bowl.
Stir in the spinach mixture until well combined.
Pour mixture into a greased baking dish.
For a low-carb version, skip the phyllo dough.
For a more traditional look, place a couple of sheets of whole wheat phyllo on top and lightly spray with olive oil.
Bake for 30–40 minutes, or until set and golden brown on top.
Let cool slightly before slicing.
