Ingredients:
- For the Herb Roasted Chicken:
- 4 chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons dried herbs (thyme, rosemary, or your choice)
- 3 cloves garlic, minced
- Salt and pepper to taste
- For the Garlic Mustard Potatoes:
- 1.5 lbs baby potatoes, halved
- 2 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt, pepper, and fresh herbs (like parsley) for garnish
- For the Green Beans:
- 1 pound green beans, trimmed
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: chopped almonds for garnish
Instructions:
- Prep the Chicken:
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, dried herbs, minced garlic, salt, and pepper.
- Coat the chicken breasts in the mixture and place them in a baking dish.
- Prep the Garlic Mustard Potatoes:
- In another bowl, combine the halved potatoes, Dijon mustard, minced garlic, olive oil, salt, and pepper.
- Toss until well coated, then spread them in the baking dish around the chicken.
- Bake:
- Bake in the preheated oven for about 20 minutes.
- After 20 minutes, add the trimmed green beans to the baking dish. Drizzle them with olive oil and season with salt and pepper.
- Continue baking for another 20 minutes or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are tender.
- Serve:
- Let the dish rest for a few minutes before slicing the chicken.
- Garnish with fresh herbs and serve warm.
