Ingredients:

  1. 3 ripe bananas, mashed
  2. 1/3 cup melted butter
  3. 3/4 cup granulated sugar
  4. 1 large egg, beaten
  5. 1 teaspoon vanilla extract
  6. 1 1/2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 1 cup fresh or frozen cranberries
  10. Zest of 1 orange

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas and melted butter together.
  3. Stir in the sugar, beaten egg, and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and stir until just combined.
  6. Gently fold in the cranberries and orange zest.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then remove it to a wire rack to cool completely before slicing.
