Easy Crockpot Dinner

Easy Crockpot Dinner – Creamy, Cheesy, Comfort Food PERFECTION 😍

If you’re looking for a no-stress, crowd-pleasing dinner, this one is it. I made this easy crockpot pasta dish, and let me tell you — it was delish. The kind of meal where everyone goes back for seconds… and thirds.

It’s rich, creamy, slightly spicy, and SO comforting. Best part? The crockpot does most of the work while you go about your day. This is one of those recipes that’s perfect for busy weeknights, potlucks, family dinners, or when you just want something warm and filling without a lot of effort.

🧀 Ingredients

• 1 big block of Velveeta

• 1 (8 oz) block of cream cheese

• 1 can cream of chicken soup

• 1 can Rotel tomatoes with chilies

• 2.25 lbs ground beef

• 1 box bowtie noodles

🍲 How to Make It

1️⃣ Turn your crockpot on HIGH.

2️⃣ Brown the ground beef in a skillet, drain if needed, and add it to the crockpot.

3️⃣ Add Velveeta, cream cheese, cream of chicken soup, and Rotel tomatoes.

4️⃣ Cover and cook on HIGH for about 1½ hours, stirring occasionally until everything is melted and creamy.

5️⃣ Boil the bowtie noodles separately.

6️⃣ Right before serving, stir the noodles into the crockpot.

💡 Pro Tip: I added about 1 cup of pasta water to thin the sauce just a bit — do what feels right for you depending on how creamy you like it.

This dish is pure comfort food — cheesy, hearty, and incredibly satisfying. It’s also super flexible: swap the beef for ground turkey, add some jalapeños for extra heat, or toss in peas or corn if you want a veggie boost.
