Mini Apple Fritter Waffle Donuts

Ingredients:

For the Apple Filling

1 cup apples, peeled and finely diced

2 tablespoons butter

2 tablespoons brown sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

For the Waffle Donuts

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup milk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

Vegetable oil for frying

For the Glaze

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Directions:

Prepare the Apple Filling: In a medium skillet, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for about 5-7 minutes, or until the apples are tender. Remove from heat and let cool.

Make the Waffle Donuts: In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined.

Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions.

Cook the Waffle Donuts: Lightly grease the waffle iron with cooking spray or oil. Pour a small amount of batter into the waffle iron, then add a spoonful of the apple filling on top. Cover with more batter, close the waffle iron, and cook until golden brown and crispy, about 3-5 minutes. Repeat with the remaining batter and filling.

Make the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.

Glaze and Serve: Once the waffle donuts are cooked, remove them from the waffle iron and drizzle with the glaze. Serve warm and enjoy these delightful mini apple fritter waffle donuts!
