Ingredients:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 cups diced fresh pineapple
  • 1 cup diced fresh mango
  • 1 cup diced fresh papaya
  • 1 cup diced fresh kiwi
  • 1 cup diced fresh strawberries
  • 1/2 cup sweetened shredded coconut
  • 1/4 cup chopped macadamia nuts (optional)
  • Chopped fresh mint, for garnish

Directions:

  1. In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. In a separate bowl, whip the heavy cream until it forms stiff peaks.
  3. Gently fold the whipped cream into the cream cheese mixture until well combined and smooth.
  4. Add the diced pineapple, mango, papaya, kiwi, strawberries, sweetened shredded coconut, and macadamia nuts (if using) to the cream cheese mixture. Gently fold to combine, making sure all the fruit is evenly coated.
  5. Transfer the salad to a serving bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld.
  6. Before serving, garnish with chopped fresh mint.
